Chia Pots - Retreat Style

Gotta love us a chia pot ‘cos it’s sort of like having pudding for brekky!

We now have these on one of the mornings at retreat and they are a hit with our participants. A great source of both protein and fibre, and yummy on the taste buds.

SERVES 4

INGREDIENTS

1/4 Cup Chia Seeds
1 1/4 Cups Unsweetened Almond and Coconut Milk
1 tsp Vanilla Extract
2 tbsp Sugar-free Maple Syrup
2 tbsp Berry Coulis (raspberries blended with some Splenda to sweeten)
2 tbsp Natural Unsweetened Greek Yoghurt
1/4 Cup Granola (see previous recipe)

DIRECTIONS

Whisk all the ingredients together in a bowl.
Let sit for 10 minutes, stirring every 2-3 minutes.
Cover and place in the fridge for 2-3 hours, or overnight.
Remove and top with a layer of berry coulis, greek yoghurt and granola.
Top with a teaspoon of cacao nibs if you like.
